Yum, yum, yum! My family added cool whip on top, but it was good without. The oil I used was sunflower, so it had "healthy oil." I'm wondering how it would be with chunks of apples in it. Think I'll try that next. Ate it warm and wow.
This is a simple and delicious recipe! I substituted plain canned pumpkin for the applesauce and added an extra 1/2 tsp of cinnamon plus 1/2 tsp of ground ginger and 1/4 tsp of ground cloves. So good! Like others recommended, I baked 16 cupcakes to make the portioning easier -- took 20 minutes to bake. This is a keeper, especially with the holidays coming!
This was great! I substituted yougurt for sour cream, because that is all i had, and I added mini chocolate chips to half and blueberries to the other half. it was fabulous, even the kids liked it. It only took 25-30 minutes and 40-45 minutes would have been way too long.
Easy, moist and delicious.
