This is delicious soup. I hesitated to try this one because how can it even be good, right? Wrong! It's great.
I added a little bit of pureed chilies in adobo that I keep in the freezer. Let it sit for a few min, break off a tiny piece, and throw it in the pot. It added the perfect little kick for a spicy - SUPER cheesey- thick and creamy potato soup.
