This was delicious. I added just a little extra salt and definitely the flavor booster of thyme and chives. It took longer to cut the potatoes, onions, and cheese than it did to cook! Very easy!
I bought shredded carrots instead of grating them myself. I also did not have a blender so we did not puraee it, just left the chunks and it was delicious. To get the cheese to melt we cut up a brick of cheddar and it was easy. Depending on how much cheese you like, you couldve added a little more.
