Wonderful recipe! Loved it, except for underdone potatoes. Googled, and found that a Slow Cooker "Low" isn't hot enough to fully cook a potato (needs to be 210 degrees). So, after finding this out after five hours of cooking, I gave the pot of soup an hour-plus in a 250 oven, and proceeded with the recipe from there. Undercooked potatoes in a crock pot seems to be a universal problem. Now i know.
