This refreshing yogurt-based dip is inspired by the Greek spread tzatziki, and pairs well with pita chips or crudités.

Ingredients

  1 large uncooked onion(s)
2/3 cup(s) low fat plain yogurt
8 Tbsp fat-free cream cheese
1/4 tsp table salt
1/8 tsp black pepper, or to taste
2 tsp dill, fresh, or 1 tsp dried dill weed
2 large cucumber(s), peeled and cut into bite-size cubes

Instructions

  • Chop onion in a food processor or blender. Add yogurt, cream cheese, salt, pepper and dill; whir until well combined. Fold in cucumber; chill until ready to serve. Yields about 3 heaping tablespoons per serving.

Notes

  • Tzatziki flavor is enhanced the longer it's chilled, so make it a day or so before you want to eat it.

I used about 1 tsp of dried minced onion instead of raw (don't like raw onion!), greek yogurt, and chopped just one seeded cucumber up in the food processor before adding the rest of the ingredients. It was great!

It's really as simple as it says! However the onion and dill portions are way off. Use way less onion and way more dill. In addition, blend a cucumber in along with adding pieces, it gives the dip a more well-rounded flavor. Lastly, Greek yogurt will thicken up the the unfortunate wateriness o plain non-fat yogurt.

I used non-fat greek yogurt and 1/3 less cream cheese to make the dip. I also added some minced garlic to mine. I used 2 medium sized fresh cucumbers from my garden, which made the dip extra yummy. The key for me was to let the cream cheese set out for a while then mix with the yogurt as I do not have a food processor or blender. It worked great. Dip was delicious!
