Ingredients

4 large whole wheat pita(s)   
1 cup(s) part-skim ricotta cheese   
1/2 tsp garlic powder   
  10 oz chopped frozen spinach, thawed and drained of excess water   
  1 large fresh tomato(es), beefsteak, thinly sliced   
1/2 cup(s) feta cheese, crumbled   
1 tsp dried oregano   

Instructions

  • Preheat oven to 400ºF.

  • Arrange pitas on a large baking sheet. Combine ricotta and garlic powder; spoon mixture over pitas, to within 1/2 inch of the edges. Top with spinach, tomato and feta; sprinkle with oregano.

  • Bake until edges of pitas are golden, about 12 minutes. Serve warm or at room temperature.

This is the perfet thing to satisfy my carb cravings! I use fresh spinach, and press a clove or two of fresh garlic into the Ricotta, and they're perfect!

Very Tasty and filling! One suggestion for next time: Use fresh spinach, frozen seems to have a funny taste. I also added fresh mushrooms and a small amount of shrimp for no additional points.

This pizza is great! This was my first time making it, so I still have some work to perfect it, but overall it's great. One suggestion is to be careful not to put too much ricotta because it can be a little overpowering. Also, more tomato makes it more like regular pizza so don't be stingy.

Instead of using pitas I used halves of whole wheat Arnold sandwich thins, 1/2 cup of the ricotta cheese. Making the pizzas only 4 points! Great quick meal, you can definitely switch it up with the veggies for some variety.
