Thrilled! I made exactly 36 mini muffins out of this. I had no yogurt so substituted 1 cup milk and 1 tbs apple vinager to activate the baking soda. Also added 1 tbs vanilla essence to compensate for lack of vanila flav in yogurt. I was extra careful to only 'just' mix wet and dry ingredients and it totally paid off with super light muffins (which is rare in a 'healthy' muffin recipe). Now to get them in the freezer before the kids and I have too many!
