The batter is VERY wet. I had to bake the full 18 minutes and the "bake" was uneven. Muffins that thoroughly browned had the best texture and appearance. Others looked underbaked and tasted gummy. The good ones look like an English crumpet--which has the texture of a damp sponge. THe taste is good after they cool, but more chocolate than banana flavor is present. I was considering muffin papers to avoid mess, but spraying the muffin tins worked great, every one popped out with no trouble.
