I jus tried this, and LOVED it!! Was the perfect blend for a cheesecake, and perfect for anytime, whether its just at home, or for a party. Planning on making this again.
These were excellent w/ & w/out the cherry topping. The lemon could be swapped for lime too. Even not using light butter and a slighter fattier cream cheese (50% reduced was all I could find) these still came in at a 3 point value.
This recipe came out awesome-- my new go-to. I opted to have mine naked with some fresh raspberries on top. I think next time I might try replacing the lemon juice with mango nectar to make mini mango cheese-cakes-- would be great with some fresh strawberries on top!
The crust did not stay formed very well. Otherwise tasty.
