This recipe is awesome. You can speed it up by using leftover rice and rotisserie chicken. We used Rotel along with a small can of diced tomatoes. If you like Popeye's jambalaya, this is for you. Give it a twist on the flavor with a smoky or hot paprika. Jalapeno or Serrano peppers can give it more heat. Although it's not traditional, a dollop of non-fat greek yogurt (e.g. - Fage) adds a nice, tart flavor. Overall, this is a winner no matter how you make it!
