I had a bag of organic bananas I forgot about until they were a couple of days past their prime, so I made this bread to use them up. I made one loaf exactly as written; I made the other with egg replacer (2 eggs' worth), coconut oil, and a handful of frozen blueberries. Both were delicious! I love the inclusion of the oats; they add a bit of chewiness. This is my go-to banana bread recipe now.
