These are yummy right out of the oven. However, because there is so little fat in them, they get stale overnight. So, unless you have a big family or plan to have friends over, you may want to rethink making these. Eating them all by yourself kind of defeats the purpose :). You could shape the dough into a cylinder using wax paper, & slice/bake as needed (as with refrigerated supermarket dough). But, since most full-fat recipes are 1pt if you make the cookies this small, I'll stick w/ those.
