Fantastic recipe! This has become a staple at breakfast. Add veggies !
I skipped the phyllo dough and added chives and mushrooms I had sauteed in a non-stick pan with no oil, so no added points. Delicious and keeps me from being hungry for a good while.
Not bad. I added all my left over chooped veggies from a quesadilla night before. The phyllo is of course not the same as a real crust, and I felt something was lacking in flavor, but not sure what.... maybe an herb? Decent enough for one breakfast. Probably won't make it again though as it's also a large protion for only one person.
This was timely to make, but it was good. I did use the phyllo dough, but it would be fine without it. I had to bake it quite a bit longer than directed and cranked up the heat a little. It was good leftover, too!
