This was an excellent recipe. I am in a higher points range, so I had a double serving wth fruit for breakfast, and it was perfect!
Big hit and so easy. I added left over corn and some chopped red pepper - everyone loved it.
I added asparagus, cooked it the night before, and reheated uncovered in a 350 oven for 15 minutes, and it turned out beautifully! Very adaptable.
