I made this last night. It was simpler that I thought and really enjoyed it. I would probably use a little less thyme as I felt it overpowered the cheese/tomato mixture. The sauce was very delicious and I even poured a bit of the sauce over the side of rice I made. :)
Absolutely delicious...husband loved it. I added another 2 oz goat cheese on top of chicken pieces. Add another point.
I've made this many many times. It's one of my favorites. I pound the larger ends of the breasts a tiny bit to allow them to cook more even.
