This is an amazing side dish that really makes a meal come to life. The browned butter sage sauce really makes the squash and potatoes come to life. If you don't have sage, tarragon is an awesome substitute.
I used sweet potatoes w butternut squash and basil in place of sage., only because I thought it would go better w the sweet potatoes. My husband and I loved it. Delicious!!!!will use sage next time when I use Yukon gold potatoes.
