I made this pasta yesterday and brought it for lunch today. It was filling and the spinach was awesome. I didn't know I could draw so much flavor from this simple dish. I did make a substitution and added fat free cream cheese instead of low fat. I also added the lemmon cest with the lemon juice that that seemed to put this over the edge for me. Very filling and satisfying.
I was really skeptical about this recipe as I'm not a huge fan of spinach. It was so good! Next time I will add in some chicken as the hubby likes meat with most meals.
This was very good. I added in some basil and parsley with the spinach. I also added a few tablespoons of walnuts to the pesto. I had some sauteed mushrooms in the fridge so I threw them in. So the men folk would be happy, I added a little chopped crisp bacon to the top. I will definitely make again.
I added around 4 parts spinach (frozen, thawed) and 1 part of basil, and it was great. Even my son enjoyed it (although he says it has a strong garlic flavour, so be carefull with it!). I will do it again.
