These make the perfect breakfast on the go. I make ahead and freeze for mornings that I'm rushed. I'll take 2 or three from the freezer, microwave for about 45 seconds and wrap them in a small tortilla. A nutritious, filling breakfast on the run!
This is one of my favorite WW recipes! I like to make and freeze them for an on-the-go breakfast as well.
I use regular muffin pans and broccoli or spinach instead of zucchini. They freeze well and make a great quick grab when I need a snack or am headed out the door.
Made these Saturday morning - I grated the zucchini & onion. I made a 1/2 recipe for breakfast this week. Before they cooled completely my husband had popped about five of them - next time I will make a full recipe.
