Yummy slimmed down chicken enchiladas - tortillas can vary in points from 1 to 4 - this recipe uses tortillas that are 3 points each because that's what I can get in my area.

1 Tbsp reduced-calorie margarine
|
|
|
1 1/2 cup(s) (chopped) uncooked, onion(s), chopped
|
|

1 clove(s) (medium) garlic clove(s)
|
|
|
1/2 cup(s) fat free sour cream
|
|
|
12 oz cooked boneless, skinless chicken breast(s), cooked, cubed
|

|
1 cup(s) low fat shredded cheddar cheese
|
|
|
1/4 serving(s) Skim Extra Milk, 8 oz, 1/4 cup
|

8 serving(s) Mama Lupe's Flour Tortillas, 8-in, 3-point tortillas
|

4 oz Ortega Diced Green Chiles, Mild
|
|
|
1 1/4 cup Campbell's Soup, Condensed, Cream of Chicken, s/b 1 can 98% fat free cream of chicken soup

Instructions
- Heat oven to 350 degrees F. In non-stick skillet, melt margarine. Cook onion and garlic until tender. Stir in green chilis, sour cream and soup; mix well. Reserve 3/4 cup sauce; set aside. Stir in chicken and 1/2 cup cheese to remaining sauce with chicken mixture; roll up. Place seam side down in ungreased 12x8 baking dish. In small bowl, combine reserved asuce and milk; spoon over rolled tortillas. Top with remaining 1/2 c cheese. Bake for 30-35 minutes or until bubbly.
