I mushed all 5 bananas into the batter, that was the only change I made. I did pour into two tins and cut each loaf into 9 pieces - good size serving. The extra bananas in this bread make it sweet enough on its own w/out jam. I will definitely make it again; I love a bakery item with breakfast. Its great with a cooked egg white & some fruit (for 4 ppv total meal!).
