Ingredients

1/2 cup(s) white whole-grain corn flour   
1 tsp sea salt   
  1 large egg(s), room temperature   
1/2 cup(s) low-fat milk, room temperature   

Instructions

  • Spray 4 muffin cups with non-stick spray. Combine all ingredients well. Fill prepared muffin cups 2/3 full. Fill remaining muffin cups with water (half full). Bake at 425 for 15 minutes. Reduce heat (DO NOT OPEN OVEN DOOR) to 350 and bake an additiona l 15-20 minutes or until popovers are a deep golden brown. Serve hot. I use silacone muffin cups, The popovers are a bit dense when divided between 4 cups, 5 or 6 can be used instead.
