Ingredients

3 breast(s) (small) grilled chicken breast fillet(s), cook in skillet, finely chop after, add sauce and   
1 cup(s) Sargento Reduced fat mexican blended shredded cheese   
  1 3/4 cup(s) canned refried black beans   
  1 1/2 cup(s) canned yellow corn   
8 serving(s) Frontera Key Lime Cilantro Taco Skillet Sauce   
  1/4 cup(s) uncooked scallion(s), finely chop   
12 item(s) egg roll wrapper(s)   

Instructions

  • Preheat oven to 425 In a skillet cook 2 chicken breasts. After cooking breasts finely chop and add back into pan with entire packet of Frontera Key Lime Sauce. Let Simmer in sauce for 5 minutes. Let cool down to room temperature. In bowl, combine all other ingredients, add chicken mixture once cooled down to room temperature. Spoon mixture in to Egg roll wrappers. spray cookie sheet with non-stick cooking spray. place egg rolls flap side down and spray tops with non-stick cooking spray. Bake until golden brown 10-12 minutes

I love these! I used salsa instead of taco skillet sauce and whole black beans instead of refried because that's what I had on hand. Also added a can of diced fire roasted green chiles. There are so many variations you could make so it's to your liking. Will definitely make it again!
