Ingredients

3 serving(s) Buckwheat pancake mix   
2 serving(s) canned pumkin   
1 cup(s) low-fat milk   
  1 large egg(s)   
1 tsp pumpkin pie spice   
2 Tbsp sugar   

Instructions

  • Mix ingredients and cook according to directions on pancake box. Makes 5 large pancakes with 1/2 c. or 10 small pancakes with 1/4 c. Sprinkle small amount of powdered sugar on top of pancake instead of syrup to save on points!

This came out great with the leftover pumpkin mix I already had from Thanksgiving!! Added a little cinnamon and honey for some added sweetness. Awesome!!!
