Ingredients

1 cup(s) white all-purpose flour   
1 cup(s) whole wheat flour   
2 tsp baking soda   
1 tsp ground cinnamon   
1/4 tsp ground allspice   
1/4 tsp ground nutmeg   
  4 large egg white(s)   
1 1/4 cup(s) packed light brown sugar   
  1 cup(s) Apple Time Original Apple Sauce   
1/2 cup(s) buttermilk   
1 1/2 tsp vanilla extract   
8 oz Del Monte Crushed Pineapple In Its Own Juice, Drained   
  2 cup(s) shredded carrot(s)   
1/4 cup(s) chopped walnuts   
1/4 cup(s) low fat cream cheese   
1 cup(s) fat-free cream cheese   
2 cup(s) powdered sugar   
1 tsp fresh lemon juice   

Instructions

  • Preheat oven to 350. Spray 9x13 baking pan with nonstick cooking spray. Comgine flours, baking soda, cinnamon, allspice and nutmeg in large bowl. Stir with a whisk. In another bowl, beat eggwhites until soft peaks form. Beat in sugar slowly, followed by applesauce, buttermilk, and vanilla. Add to flour mixture and stir until just moist. Stir in the pineapple, carrots, and walnuts. Spoon batter into baking pan and bake for 35-40 minutes, until a toothpick inserted in the centr comes out clean. Cool on a wire rack before frosting. For frosting, beat cream cheeses together with lemon juice and vanilla. Add in powdered sugar until desired consistency. Spread over cooled cake.
