These are an easy cookie to make and they taste better than other recipes I've tried. If you use sweetened coconut omit the sugar from the eggs. I used unsweetened coconut and kept the sugar. You only need 1 or other other, trust me. Also, I used a Kitchen Aid mixer to ensure the egg whites stiffened. This makes rolling much easier (as do wet hands). Bake them until they start to tan for easy removal from the parchment. A great cookie to bring to a party for the the holidays.
