Ingredients

12 slice(s) Oscar Mayer Ready-to-Serve Bacon   
  1/2 cup(s) uncooked onion(s)   
  1/2 medium green pepper(s)   
  3 cup(s) fat free egg substitute   
1 cup(s) low-fat milk   
1 cup(s) low fat shredded cheddar cheese   
1 tsp table salt   
1/2 tsp black pepper   
1/4 tsp dried dill weed   
16 oz hash brown potatoes   

Instructions

  • 12 precooked sliced bacon slices 1/2 cup chopped onion 1/2 cup chopped green pepper 12 eggs/3 cups egg substitute 1 cup milk 1 package (16 ounces) frozen shredded hash brown potatoes, thawed 1 cup (4 ounces) shredded cheddar cheese 1 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon dill weed Cook bacon until crisp. Crumble bacon and set aside. Saute onion and green pepper until tender; remove with a slotted spoon. In a large bowl, whisk the eggs/egg substitute and milk. Stir in frozen hash browns, cheese, salt, pepper, dill, onion mixture and reserved bacon. Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350 for 35-45 minutes or until a knife inserted near the center comes out clean. Yield: 8 servings.

I made this for dinner, I did sub the bacon for turkey sausage. Turned out very good!! Thanks for sharing this recipe!! 8 servings = 3PP

Made this for a brunch with my girlfriends. Very easy. A few guests spiced it up with hot sauce or salsa. I cut it into twelve 3" squares, which I considered to be about 4 points each (although part of the recipe seems to indicate it is only 8 servings). Leftovers are great for heating up as a quick breakfast as well. Could probably throw in more fun veggies such as mushrooms, tomatoes or spinach, too.
