We recommend converted rice because regular long-grain rice can become mushy in slow cooker recipes.
To turn up the heat, add 1/8 teaspoon of cayenne pepper with the thyme.
Season to taste with salt and pepper.

This was very tastyI didn't however use the slow cooker. I did it on the stove top and it came out great. After reading all the other reviews he majority of the people said not to cook the rice with meal so I added after it was cooked. All in all it had a lot of flavor and I really enjoyed it. Made enough for leftovers as well which is always great!
Browned the onion, garlic, pepper, etc then added the rest of the ingredients and separately cooked rice. Made over the stovetop in about 15-20 minutes. No slow cooker necessary. Delicious and filling!
