I took quite a few liberties with this recipe, but didn't do anything to change the points value.
I omitted the onion and used red and yellow peppers instead of green, and because the recipe seemed Creole to me I added 6 okra pods.
I adapted the recipe for stovetop and used brown rice instead of converted.
It is everything it promises to be - filling, hearty and delicious! And it's even better the next day!
