This was a very tasty and satisfying breakfast along with a poach egg. I used quick cooking grits and it was still very yummy. I will definitely fix this again.

Try exchanging cheddar for soft Goat cheese (1 oz regular = 2pts, 2 oz low fat = 2pts). I'm not sure if that's enough, but goat cheese is great in cheese grits.
Very good! I grew up on ooey-gooey grits, and did not miss the butter with this at all! Way healthier and just as delicious!
