Yummy!!!! So, I did make a couple of changes. 1. Used bone in, with skin chicken thigh (and mine looked exactly like the picture, so I am wondering if that is the type photographed) 2. Didn't have capers. Still, SO good. I saw another review that said this, but mine defitinitely wasn't done after three minutes of simmering, I actually added on 11 minutes at a higher heat but I wonder if that is because the bone was in there? I'm not sure. I still recommend it.
