I cooked the chicken in two batches and added a tsp of olive oil both times in addition to the cooking spray. Try as I might when I just use cooking spray, I end up with blackened chicken instead of golden brown...every time. I was out of chicken broth so used vegetable instead, cooked brocculi in the microwave instead of green beans in pan. I even resisted adding a pat of butter to finish the sauce--- and it was very good. But anything with capers and lemon starts with a winning edge.
