I used artichoke hearts (frozen) instead of zucchini and doubled the recipe. It was good, but I think it would be even better with more seasoning- maybe green Tabasco? Fresh herbs would be good as well.
I loved the flavor of the veggies together... Almost a sweet taste. Didn't care for the bread on the bottom.
This was very good. I didn't have any zucchini when I decided to make this, so I substituted mushrooms.
Next time I hope to try it with zuchinni.
