This fruity spin on slaw is delicious. Buy the season's best apples and, for convenience, a bag of precut, thickly shredded carrots.

Ingredients

  2 large fresh apple(s), 1 red and 1 green, cored, thinly sliced, cut into matchsticks   
1 1/2 Tbsp fresh lemon juice, or less to taste   
  3 cup(s) uncooked carrot(s), cut into matchsticks (many stores sell these precut)   
1/4 cup(s) chives, chopped   
1 Tbsp olive oil   
1 tsp sugar   
1/2 tsp table salt   
1/4 tsp black pepper, or more to taste   
2 oz feta cheese, French-variety suggested, crumbled   

Instructions

  • Place apples in a large bowl and toss with lemon juice. Add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly. Yields about 3/4 cup per serving.

Notes

  • If you want more tang, use blue cheese instead of French feta (could affectPointsPlus values).

Thoroughly tasty salad. I do not eat raw apples, but I can eat them in this recipe. I made a half batch using one Braeburn(?) apple. Next time I shall use the sweetest apple I can find as the apple was a bit tart for my taste.

I really like this recipe, but as another reviewer mentioned, it can be bland. I have made this several times and added some white wine vinegar. I like put the feta over the top. Adding currents to the mix can be a way to jazz up the flavor. Toast some sunflower seeds and top the salad. Of course, anytime you add something like the currents or sunflower seeds it will change your points plus.

This is fantastic!!! I didn't have any feta cheese so used a little goat cheese and I didn't add the chives. My husband loved it!!! It made a lot so we were able to have it for several meals. I will be making this again!!!

Did not have alot of flavor. Needed more of a 'dressing' of sorts and I made sure to follow the recipe a T. It was bland.
