My picky kid liked it! He didn't even know there were mushrooms in there. Just top with ketchup and mix it all up. (I omitted the green peppers and pepper flakes and it was still very tasty.) I also skipped the "crisping" potato in the oven first step - due to lack of time. Still good! I also used baking potatoes and microwaved them the day before, then refrigerated overnight so they were easy to slice.
