Fresh Fruit Salad with Lime-Ginger Syrup

Ingredients

1/3 cup(s) fresh lime juice   
1/3 cup(s) water   
1/4 cup(s) fresh orange juice   
2 Tbsp sugar   
2 Tbsp honey   
1/4 tsp ground ginger   
1 tsp lime zest   
1 tsp orange zest   
  1 1/2 cup(s) pineapple, fresh, cut into 1-inch cubes   
  2 large mango(es), peeled and cubed (about ½ cup)   
  1/2 cup(s) fresh blueberries   
  2 item(s) (medium) kiwifruit(s), peeled and cubed   

Instructions

  • Combine first 6 ingredients in a small saucepan. Bring to a boil over medium heat; cook 5 minutes or until reduced to 1⁄2 cup, whisking constantly. Remove from heat; cool. Stir in lime and orange rinds.

  • Combine pineapple and next 3 ingredients in a large bowl. Pour syrup over fruit; toss gently to coat. Cover and chill at least 1 hour. Yield: 8 servings (serving size: about 1⁄2 cup).

I loved this recipe. I just used the sauce recipe and made the salad with apples, pears, oranges etc. It is yummy and enough citris to save the fruits that brown. I will add pineapple and mango some time - that sounds wonderful...didn't have it this time.

Made this for a party but forgot it and left at home. Had to eat and share. Very good. I used fruit on hand but used mangoes and kiwi per recipie

I made this for friends so I made the syrup and placed it in a separate container so it would not make the fruit mushy until they were ready to eat it. Smelled wonderful making it and it sure gives a nice flavor to the fruit. I cut the kiwi in slices and added some strawberries. Very colorful and flavorful. I will be making this again for many different types of occasions and some just for me!

Yum! Although I wish it were fewer points. Maybe substitute the sugar? Very tasty though.
