I made this last night and my husband and I LOVED it!! We did use greek yogurt instead of fat free yogurt and we used bread crumbs instead of the crackers since it was all I had on hand. We added some dry buffalo seasoning to the mix with some garlic powder and pepper....It was amazing crispy "buffalo" chicken!!
I used cornmeal in place of the crackers. I forgot the salt which it definitely needed. Maybe would be good with seasoned salt or onion/garlic salt.
I really liked these. You really have to crumble the crackers to make it not seem so soggy,
Doubled the recipe so we'd have leftovers. Used Greek Non-Fat Yogurt, added a 1/2 tsp of cayenne and 1 tsp garlic powder and increased the paprika. Absolutely yummy. Even my non-WW husband raved about it. Definitely will make again.
