This is SO Good! It tastes good, but also has that mouth feel that you usually only get with full-fat cream chowders. I decided to boil the potato instead of the microwave (as another reviewer suggested) the peeling happens before cooking instead of after, saving the time for it to cool. I made the full batch and then divided it among 4 12oz Masson Jars to keep for pre-portioned lunches. Yielded about 1 cup per serving when I did it, but that was a fine portion! I will make it again!
