I love this soup and the variety of vegetables in it. I added 4 T. of olive oil and sauteed the onion, red pepper, celery and garlic. This adds a depth of flavor, and also provides me with a serving of a healthy oil. At times I have switched out the swiss chard for spinach or kale. I have also used Mann sunshine slaw mix as a quick way of adding the broccoli, cauliflower and cabbage.
