Delicious and simple way to use up all the veggies in the fridge. Instead of just throwing it all in a pot and bringing to a boil I sauteed the harder veggies (onions, peppers, celery, carrots) then added the garlic and sauteed for another 30 seconds. Deglaze the pan with a bit of the broth to get a nice sauce. Now add the rest of the veggies and broth. Stir to combine and cook as directed. I used the emersion blender at the end.
