When it comes to good 'old comfort food, this is one of the best!! The cauliflower gives it a natural creamy flavor and also does a great job of faking the potato starchiness.
Here were my modifications:
* Added 2 heaping Tbsps of Greek Yogurt (Fage 0%)
* 1 tsp of butter (not 2)
* More cauliflower, less (used 2 potatoes and 13 ounces of cauliflower)
I made mine with "Mexican Meatloaf" and roasted asparagus.
Boyfriend loved it. Saying it was a hit was an understatement!
