This is a staple to my 45 lb loss I add 2 pints baby Bella sliced mushrooms a bag of tri color Swiss chard. A 1/2 cup red wine to reduce with the onion sauté and no meat or broth ...I add 16 oz of soy crumble to onion sauté otherwise 1 cup of this chile is my go to dinner . Provides iron, protein and vitamins taste is fabulous top with soy baco bits mmmmmmm!
This recipe was delicious. I added a bit more cilantro to give it a stronger flavor--and some hot sauce when I serced it to give it some zing.
Cooked this in a skillet on my stove top in about 20 minutes - eliminated the chicken broth, but included everything else in recipe. It came out very good! Needed salt, but besides that, was quick and easy.
Took other reviewers advice and double up the cumin, oregano and the chili powder. Also added 4 oz of canned green chiles and a few shakes of cayenne.
Taste is very good and still very mild for a chili. Would recommend maybe a bit less stock as the consistency is very soup-like, if you are used to a thick chili I would only use 24 oz of stock/water.
