One of our favorite go-to recipes and pretty much the only vegetarian meal I can get my husband to eat. It's delicious.
This Minestrone is very good. I did substitute brown rice for the orzo, as I had some already cooked. I also added Italian Seasoning. I didn't measure, probably about 3 to 4 Tbsp.
Full of flavor, honestly I was surprised how flavorful! I substituted FF chicken stock instead of vegetable broth and Jasmine rice in place of orzo.
