Tasty! I modified it based on reviews to avoid blandness & runny-ness.
I used 9x13glass pan, 2.25c fresh diced potatoes, almost a whole can of whole corn kernels, 2 fresh red peppers sliced. Then I sauteed 1.5c chopped mushrooms, 5cloves garlic and 1.5c onions and added evenly on top of the peppers. Topped w 8oz sausage and about 1.25c fat free shredded cheddar.
