This is a favorite recipe. I've never had a problem with it being too soggy. My rectangular baking dish is a little bigger than usual so maybe the moisture can evaporate better. I also roast my corn and peppers (I use red & yellow sweet peppers) which gets the moisture out of those. With spicy sausage it has plenty of flavor. Easy to separate portions and freeze for quick meals.
This is a really good casserole. I've made it for my kids and grandkids and everyone likes it!
One of our favorites from the new One Pot Meals cookbook. Absolutely delicious. I will prepare this again. A real comfort meal.
