The only change I made was to marinate the chicken beast in the buttermilk for a couple of hours. This was a great recipe that my entire family enjoyed, including my picky 6 year old.
Easy to make and delicious
I used Lactaid Fat Free Milk, and mixed panko with the cornflakes. It came out awesome. I didn't even miss the skin that I took off. Was great not having to turn the chicken over. Cooked all the way through.
Wonderful flavor, I soaked the chicken in the buttermilk and skipped the flour and dredged the chicken in the cornflake crumb mixtue. I also lightly sprayed the chicken with Pam before baking. It was a big hit.
