Nice quick dinner or lunch! Loads of vegetables make it filling, but not so much that you cannot move! For our tastes though, it could use more immediate taste of spice/heat; the heat in this kind of sneaks up on you!

Love this recipe. Lasts me all week, just warm it up and go. Sometimes I add a little fat-free shredded cheddar cheese to the top or have it over brown rice. Perfect everytime!
