A good hearty meal for not many points! The vegetable puree was a little thick, so I did not find that it needed 45 minutes at 425. Rather I did 40 at 350 and it wa heated through. I added some crushed red pepper to the puree to kick the heat up.
Very good and very filling. I added mushrooms and some Italian seasonings. Lasagna needs more than just salt and pepper! Will definitely be making this again. :)
I absolutely love this dish. The puree is so delicious; made it perfect. My whole family loved it. I added a pinch more salt for flavour and substituted 1 large zucchini and 2 medium squash for the eggplant.
