This tasted good the day it was made, and GREAT the day after! I'm not a big fan of cumin so I skipped it and used seasoned black beans rather than plain to make sure it still had enough flavor. I also did not warm the beans, just served it cold.
We made this with sweet white onion, and it was wonderful! Very filling and satisfying. The variety of flavors--- orange, cilantro, vinegar=== contrasted nicely. We will definitely make this again!
