I peeled the potatoes and cut in strips (like fries). I also turned oven up to 425 deg. They were crispy and yummy

Everyone in my family loves these! Great finger food! The only thing I do differently is to shake on a little garlic and onion powder before the baking process. Excellent! (Yummy dipped in ketchup.)
So yummy! Enough to make you feel like you are eating bad for low points =) I used sea salt to cut down on the sodium as well.
