This dish is SO good. I added a little oregano to the flour, and substituted garlic salt for the salt. To serve I tossed a little arugula with a spray of olive oil and served it Milanese style with a few shards of parmesan.
I used to make a recipe like this but it left out the re-dipping step and did not use flour. It also called for frying first before you put in the oven. I really like this version better. I was worried it would not be as tender but I was wrong. I could cut my pork with a fork. This is definitly something I will make again.
