This is a delicious dish served hot or cold (as a salad). I made a few alterations, based on what I had in the pantry or to make it a meal all its own. I have added a can of drained/rinsed black beans, and sauteed the onions before adding to the quinoa. I wilt the spinach into the pot just prior to serving. I make a double batch, using 3/4 regular quinoa,a nd 1/4 red quinoa. I make this every two weeks, and add it to my lunch or mid-afternoon snack!
