I love lentils and this soup didn't disappoint. My slow cooker runs a little hot, so I only needed to cook it for 5 1/2 hours instead of the recommended 6.
Yum!! The texture is different than I am accustomed to, but the flavor is great! I will definitely make again. I only had 4 cups broth, so I used water for the other 4 cups, and I used shredded carrots instead of chopped.
I used 1 strip of regular bacon & water instead of broth. Still has good flavor but needs more salt to taste. In the past I've also added tomato towards the end of cooking. This is the only way I know how to make lentils. Love 'em.
The soup is yummy although i needed to cook mine for 8 hours for the lentils to soften. Next time I would cut the veggies smaller and not large chunks as described in recipe.
