I found the recipe to be a bit tart. Although it wasn't my favorite mashed potatoes ever, I discovered a GREAT way to use the leftovers: spray a baking sheet, take about 1/3 cup of the mashed potatoes and shmush into a patty form, place on baking sheet and spray again, then put in the oven at 450 for about 10-15 minutes. flip the patties, spray again, and cook for another 10-15 minutes. comes out crisp and tasting like delicious hashbrowns, but cooked only with spray and no oil!!
