We started WW less than 2 weeks ago and have made this 3 times!! It is soooo good! I've raved about it to anyone who will listen. We modified it slightly using squash, zucchini, red and sweet onion, mushrooms, and peppers. I will make this often!
This is my favorite side dish. I toss the veggies in red wine vinegar before I roast.
absolutely yummy! Have this in a Toufayan pita half for lunch with some light mayo. EXCELLENT!
