This recipe was a hit with my family! Kids weren't too crazy about the crust, but it was easy to cut around the edge. Anytime I can cook something flavorful, healthy and everyone eats it...That's SUCCESS!
Very tasty. I substituted Dijon Mustard for the olive oil. Rubbed the seasoning all over the roast, allowed the roast to "dry" for 3 hours in the fridge and then cooked according to directions. Absoultely tasty. And easy.
I like rosemary with pork, so I used 2 tsp of that instead of the oregano. I also cooked it for about 40 mins because my family likes meats well done. It was a big hit! I am very happy to have leftovers to enjoy this week. I will def make this again!
