This was super easy, and very tasty, but I let mine cook just a little too long, so it turned out dry. I think you want to be sure to pull it out and let it sit for a while before cutting, because it will still cook for a few minutes.
Roasted this with a few tiny potatoes and big onion wedges......added a few bay leaves.... Turned out amazing!
So easy, so delicious! My family loved it. I couldn't find a 2 lb. tenderloin, so I used 2 -1.5 tenderloins, increased the spices by another half, and cooked it for 35 minutes. Plenty for leftovers.
Great weeknight meal. Very quick and easy. I used dried thyme and oregano because I was in a hurry. Next time I will use fresh. Most certainly will make again.
