I love strawberry shortcake and this fit the bill. I didn't use any citrus, in the past I've found the "refreshing" flavor of lemon or orange to be more bitter than I like. I added a tablespoon of vanilla extract to the batter which I enjoyed very much. I had trouble getting 10 cakes though. I wound up with 8 small ones using 2 table spoon (definitely not heaping). I will definitely make them again.
