Spicy Shrimp & Rice

One pound shrimp
1/3 cup long grain rice
1/3 cup wild rice
1/2 cup vinegar
2 cups water
2 tbsp. Old Bay Seasoning
2 tbsp. parsley
Salt/pepper to taste
In large pan combine water, vinegar and spices.
Bring to a boil.
Add rice, stir, reduce heat and cover. Simmer on low for 15 minutes.
Remove cover and stir in shrimp.
Replace cover and allow shrimp to steam until tender (approx. 5-6 minutes).
Fluff with fork and serve.
I like to serve this with a spinach salad with a rasberry vinagrette or other sweet type of dressing to offset the spicy main dish. It is filling and satisfying.
